Potato & Green Bean Salad

 

Preparation: 30 minutes  /  Cooking: 30 minutes

Ingredients

  • This will create a starter for 4 people.
  • 300 grams Potatoes
  • 150 grams green beans
  • 5 grams chives
  • 30 grams Aged Parmesan (finely grated)
  • 2 tbsp vinaigrette (combine 100 ml TruffleHunter English Truffle Oil, 1 tbsp red wine vinegar, 1/2 tbsp water & a pinch of salt in a screw top jar and shake until it emulsifies)
  • Salt and Pepper to taste

  1. In a bowl, combine the, Parmesan, chives & the vinaigrette.
  2. Peel the potatoes & cut into quarters length-ways. Top & tail the beans.
  3. Bring 2 pans of lightly salted water to the boil.
  4. Boil the beans & potatoes for about 7 minutes until they are slightly overcooked.(As this is a warm salad make sure they are ready at about the same time).
  5. Drain & add to the bowl of truffle mixture.
  6. Toss gently.
  7. Adjust seasoning to taste.
